Red Lentil & Roasted Pepper Power Dip
A Heart-Loving Snack
Red lentils contain soluble fiber, which supports healthy cholesterol levels, lowers blood vessel plaque, and reduces the risk of coronary artery disease.
Red pepper is rich in vitamin C and carotenoids to promote eye and skin health, reduce inflammation, and support immune function.
Olive oil supports HDL (High-Density Lipoprotein, AKA "good" cholesterol) function and vascular health.
Ingredients
1 cup dry red lentils
2 large roasted red bell peppers (or ¾ cup jarred + drained)
2 large roasted carrots
2 cloves of garlic
2 tbsp. fresh lemon juice
3 tbsp. extra-virgin olive oil
½ tsp. smoked paprika
½ tsp. ground cumin
Salt and black pepper, to taste
Optional: pinch of chili flakes or beet powder for richer color
Directions
Rinse the red lentils thoroughly. Simmer them in water for 7-8 minutes until very soft, then drain.
Add the cooked lentils, roasted peppers, carrots, garlic, lemon juice, and spices to a blender.
Blend while slowly drizzling in olive oil until smooth.
Season to taste with salt and pepper. Enjoy warm or chilled.
