Avocado Yuzu Dip

Ingredients

Yields 4 cups

  • 4 ripe avocados, halved, pitted, and peeled

  • 2 cups shelled edamame

  • 2 tsp light soy sauce or coconut aminos

  • 1 tsp grated ginger

  • 1 tsp toasted sesame oil

  • 1 tsp yuzu juice, to taste

  • Sriracha (for optional spice)

  • 2 tbsp furikake

Directions

  1. In a food processor, chop the edamame and avocados together. Add soy sauce, ginger, and a few drops of sesame oil until it’s a chunky consistency (do not puree).

  2. Transfer the dip to a serving bowl, then stir in the yuzu juice and ginger.

  3. Taste and adjust with sriracha for heat or additional soy sauce/aminos for saltiness.

  4. Top with furikake.

  5. Serve and enjoy with tortilla chips, crackers, and sliced veggies (cucumbers, peppers, or carrots).
